Smoking a 14 Pound Turkey

**I bought a 14 pound turkey with NO injections, NO enhancements for tenderness/juiciness**
First step, I thawed the turkey and let it sit in a brine overnight.

Brine Recipe:
1 bottle apple juice
1 pound brown sugar (light)
1 cup Salt
3 quarts cold water 
2 cut oranges
1 ginger root sliced
1 tablespoon rosemary
6 bay leaves

6 large garlic cloves, peeled


 How I smoked it:
4 chunks of apple wood  
Held smoker temp between 350-375F
Smoked for 3hours and 45min.

8 Pound Pork Butt

I bought an 8 pound boston butt and put a homemade rub on it.


Rub whole butt in mustard first and then sprinkled rub on:

1/4 cup sugar
1/4 cup table salt
1/4 cup paprika
1 Tablespoon black pepper
1 Tablespoon powder garlic
1 Tablespoon onion powder
1-1/2 teaspoons cayenne pepper







Cooked the butt at 225-250°F to an internal temperature of 190°F

First Beef Brisket

This is my first time smokin a whole beef brisket. It was hard finding one here in northern Alabama at the grocery stores. I ended up buying on at our local samsclub. It is 11 pounds. My plan is to cook it around 225F for 10-12hours until internal temp of 185F is reached.
